We all know that breakfast is the most important meal of the day. So why do we settle for subpar cereal or a piece of toast? Brighten up your morning with this beautiful creation from founder and recipe developer Hayley.
This chia seed pudding with blackberry yoghurt recipe is the perfect breakfast, pudding or on-the-go snack to make the night before - just bung it in the fridge over night. It looks great and will add a bit of glamour to your day. It also accompanies our Cherry + Almond protein balls really well if you want to add some extra protein to this meal.
¼ cup chia seeds
½ tbsp. maple syrup
½ tbsp. vanilla extract
1 cup coconut milk
1 fig for decoration
For the Topping
1 cup blackberries
1 cup yoghurt (We love The Collective Dairy’s new Pro Yo yoghurt in berry flavour for this recipe!)
1. Mix the chia seeds with the maple syrup, vanilla extract and coconut milk in a sealable jar. Leave in the fridge to set for a few hours, or preferably overnight. You will notice the chia seeds absorb the liquid causing them to expand.
2. For the topping, blend together the fresh blackberries and yoghurt to a creamy texture. Poor over your chia pudding and enjoy!
3. Top with fresh fruit and of course our Cherry + Almond protein balls. You may also want to decorate the chia pudding by cutting up pretty fruit and placing on the side of the jar is you have a glass one. We've chosen to use slices of fig as they look gorgeous and taste yummy with this combination.
